Mix it Up!a salad for lunch
This salad is a combination of two of my favorite salads – a traditional Greek
salad and an Israeli Chopped salad. Yum! It gets even better as it sits in the fridge,
but you will get more liquid also. Try folding a paper towel and putting it on top of
the salad while it waits in the fridge. This will absorb some of the moisture.
Greek Goodness
*1 head of romaine lettuce -tear into small pieces
*1 English cucumber – chopped
*1 red bell pepper – chopped
*1 green bell pepper – chopped
*1/2 red onion – chopped
*3 plum tomatoes - chopped
*1/3 cup pepperoncini in a jar – chopped; squeeze out extra liquid
*1/3 cup Feta cheese
*10 Greek olives – remove pits; slice in half
Dressing:
*1/3 cup of extra-virgin olive oil
*1/4 tsp. ground sea salt
*1/2 tsp. ground black pepper
Wash all of the vegetables
thoroughly. Mix all of the
salad ingredients except for
the Feta cheese. Whisk
together the dressing
ingredients and toss with the
