Mix it Up!a salad for lunch This salad is a combination of two of my favorite salads – a traditional Greek salad and an Israeli Chopped salad. Yum! It gets even better as it sits in the fridge, but you will get more liquid also. Try folding a paper towel and putting it on top of the salad while it waits in the fridge. This will absorb some of the moisture. Greek Goodness *1 head of romaine lettuce -tear into small pieces *1 English cucumber – chopped *1 red bell pepper – chopped *1 green bell pepper – chopped *1/2 red onion – chopped *3 plum tomatoes - chopped *1/3 cup pepperoncini in a jar – chopped; squeeze out extra liquid *1/3 cup Feta cheese *10 Greek olives – remove pits; slice in half Dressing: *1/3 cup of extra-virgin olive oil *1/4 tsp. ground sea salt *1/2 tsp. ground black pepper Wash all of the vegetables thoroughly. Mix all of the salad ingredients except for the Feta cheese. Whisk together the dressing ingredients and toss with the salad. Sprinkle the Feta cheese onto the top of the salad.
