Zucchini brownies and chocolate chip cookies are items you can also freeze, along with a n
easy chocolate banana muffin (described below). For the kids, I make fruit popsicles with coconut milk and honey, which are perfect for those hot summer days when they want a cool treat.
Eating healthy can be tough, especially when you have a busy family. Add in a new baby, and
most people find healthy eating is the least of their concerns. However, if you plan ahead, you
can save both money and time.
Skinny Dark Chocolate
INGREDIENTS
1 cup light vanilla yogurt
½ cup skim milk
½ cup uncooked oats
2 egg whites
½ tsp vanilla
2 large bananas (mashed)
¼ cup brown sugar
1 ¼ cup whole wheat flour
½ tsp baking soda
2 tsp baking powder
½ tsp salt
2 tsp cinnamon
1 cup dark chocolate chips
DIRECTIONS
Preheat your oven to at 375°F.
Combine yogurt, milk, oats, vanilla, and
egg whites. Set aside for 5 minutes to allow
the oats to soften. Then, stir in the mashed
bananas.
In a separate bowl, stir together the brow
n
sugar, flour, baking soda, baking powder,
salt, and cinnamon. Slowly stir the dry
ingredients into the yogurt and oat mixture.
Do not beat! Then, gently fold in the
chocolate chips.
Spoon batter into greased mini-muffin
tins. Bake until golden brown, about 1518 minutes. Serve fresh, or store in the
freezer; reheat in a microwave until warmed
throughout, about 1 minute.
