Since the 1930s, the federal government has sought through a variety of regulations to stabilize milk prices. The idea is to keep farmers from going bust or from over-producing and to protect consumers from price spikes and from shortages.

The complex system has been criticized for being too generous or too stingy for farmers.

Danzeisen felt he’d have a better chance of surviving if he had more control of the supply chain. He decided he’d sell milk to stores and directly to consumers.

“People care about where their food comes from. They want local food,’’ Danzeisen said. “This is as local as it gets.”

And he decided he would sell his milk in glass bottles.
