This is a great fall dinner that I personally enjoy all year round - great comfort food served with mashed potatoes and apple sauce . I hope you enjoy this recipe as much as I do .

Roast Pork Loin and Sauerkraut

Ingredients ( Serves 4 )
Directions
• 4 lbs . Bone in Pork Loin
• 1 Tablespoon Bacon Drippings
• 3 Tablespoons Olive Oil
• 2 lbs . Sauerkraut
• 1 Cup Diced Sweet Onion
• 1 Large Red Apple Diced
• 2 Tablespoons Brown Sugar
• 1 Teaspoon Caraway Seeds
• 1 Cup Dry White Wine
• Salt and Black Pepper
Pre-heat oven to 350 degrees . Sauté the onions in the bacon drippings until translucent then add the diced apples until just tender . Drain any excess liquid from the sauerkraut and mix with the apples , onions , brown sugar , caraway seeds , and white wine . Place in a small roasting pan so it has a depth of approximately 2 to 3 inches .
Season the pork loin with salt and pepper and brown the outside turning to brown all sides in a hot sauté pan with the olive oil . Place the pork loin in the roasting pan with the sauerkraut and cover with foil . Roast for approximately one hour the remove the foil and roast for an additional 20 minutes .
