To shuck an oyster , use a cloth to hold it in place . Using a shucking knife , slide it in the thickest end of the oyster where the shell hinges and twist . Run the knife along the edge of the shell , twisting to pry it open . Remove the top shell and run your knife along the base of the oyster to cut the adductor muscle , flipping the mollusc . Keep on ice until you ’ re ready to eat .
