› › BLUE CRABS Named as such for the brilliant blue on their front claws, Maryland’s crabs are caught in the Chesapeake Bay and are a pride of the region — for good reason. They’re delicious. We eat them in any manner possible — from steamed and sprinkled with Old Bay, served atop paper and with a mallet (be ready to work), to sautéed soft shells, as crab cakes, in crab soup, in crab dip, or in myriad other variations. We’ll put crab in almost anything. TRY IT Jimmy’s Famous Seafood (Dundalk), Bo Brooks (Canton), Captain James Landing (Canton), Nick’s Fish House (Port Covington) OLD BAY Speaking of Old Bay: The zippy red seasoning, a blend of 18 spices, was concocted by a German immigrant living in Maryland in 1939 and was always meant for flavoring seafood. Later, it was bought by McCormick & Co., and has always been manufactured locally. These days, the spice certainly isn’t restricted to crab seasoning: Find it used in a slew of unexpected applications, from Herr’s Old Bay Cheese Curls and Mr. Dee’s Old Bay Seasoned Fries to George’s Old Bay Bloody Mary Mix.
