Culinary Innovation

Congratulations to WWETB Back to Education Initiative Culinary Tutor, Margaret Corcoran who recently won the coveted award for “the product most likely to succeed in the retail environment” as part of the MSc in Culinary Innovation and Food Product Development she is currently studying through DIT.

Margaret’s produced a gourmet sausage roll. She devised and developed the recipe and took it through the process enabling it to be viable in the retail market.

She developed a pastry with the addition of gram flour, which increased the protein content. It was produced without the use of preservatives or additives. The ingredient list also included fruit, vegetables and seeds which are all required for a healthy diet.

She then labelled and packaged the gourmet sausage roll to meet legislation requirements.
