Summary chart of hygiene measures to be implemented in all crop stages –
from planting to packing – to prevent and control food safety risks and hazards
Hygiene
Component
General hygiene instructions
Farm Hygiene Wear protective clothing before spraying pesticides.
If you feel sick, inform the farm manager.
Cover skin cuts.
No smoking and eating at the site.
Keep animals out of site.
Keep the site clean.
Personal Hygiene Wearl clean clothes.
Keep your hands clean. Keep your nails cut. Don’t wear jewelry.
Don’t handle produce when you are sick.
Facilities Hygiene Basins for hand washing: optimally with running water, soap and (one-use) towels.
Toilets: in good condition and always supplied.
Dressing rooms: with lockers to store working clothes.
Harvesting
Hygiene If multi-purpose containers are employed for transporting produce, they have to be cleaned and meet
hygiene standards for transporting produce.
Vehicles and tools are cleaned regularly. Machinery is cleaned and disinfected before moving between
paddocks.
Hands are kept clean by having access to clean hand washing facilities on-farm.
Produce Handling,
Packing and
Storing On-site Collection, produce handling, storage and distribution areas and facilities must be kept clean and maintained
in hygienic conditions in correspondance with a cleaning and maintenance schedule, which defines
procedures and frequency of cleaning measures.
In case of ice or water being used for treating harvested goods, make sure to use only potable water.
Packaging material must be stored and handled in a hygienic way.
Store lubricants and cleaning agents safe and apart from harvested goods.
Minimize and avoid the exposure of produce to emissions, sunlight or weathering.
Avoid cross-contamination of fresh produce by rejected produce, accumulated waste material and faulty
packaging material.
Organic Fertilizer
Hygiene The use of human sewage and sewage sludge is banned from the farm.
There has to be a written risk assessment to be conducted and documented which considers source,
characteristics and intended use of the organic fertilizer or substrate.
You need to demonstrate through available evidence that potential risks have been considered at least by
documenting the type of organic fertilizer, method of composting, weed/seed and heavy metal content, timing
of application and placement of organic fertilizer.
Sustaining hygiene
involving
subcontractors
and visitors Make sure that visitors, vehicles and machinery that enter do not bring in soil.
Provide footbath and tire dips for all visitors and vehicles.
Provide boots for all visitors and workers.
Avoid driving vehicles through crop areas.
Animal activity as
potential food
safety risk Monitor the grove and adjacent land for evidence of animal activity.
Assess extent of intrusion, nearness to the grove, proximity to harvest and other relevant factors.
If animal intrusion is detected, measures shall be taken to remove or prevent harvesting of any potentially
contaminated product.
