INGREDIENTS
24 okras, sliced
1 yellow onion, diced
3 cloves garlic, minced
2 tomatoes, chopped
1 1/2 teaspoons curry powder
(preferably from May Pen Market
or your Indian grandmother)
salt and pepper, to taste
coconut oil
1/2-2/3 cups water
2 eggs, hard boiled
1/2 cup quinoa, cooked (follow
instruction on package)
