Homemade bread is best! Hearty beef stew
It’s therapeutic to make, fills your home with delicious aromas and there are no hidden
ingredients. This recipe is base for lots of baked goods like bread rolls. 15ml cooking oil
WHITE YEAST BREAD
1 onion finely chopped
1 green pepper finely chopped
Serves 8
30ml curry powder
Takes 1 hr 10 plus proving
600g bread flour 1 egg
20g dried yeast 1tsp salt
40g fat plus extra for greasing 70g sugar
5ml barbeque spice
1 tomato chopped
500g beef cut into cubes
300g warm milk plus extra 2 potatoes peeled and chopped
Combine flour and salt. Make a well in the centre and add sugar then cover. 2 carrots chopped
Add the yeast, milk and butter. 1 beef stock cube
Use a wooden spoon to stir the mixture until well combined, then use your hands to bring
the dough together. Turn out onto a lightly floured surface and knead for about 8minutes or
until the dough is smooth and elastic. 375ml water
Brush a bowl with oil and add the dough. Rub the top of the dough with oil. Cover with a
damp tea towel or plastic wrap. Set aside in a warm place to rise for about an hour or until
doubled in size.
Punch the dough down. Turn out onto a lightly floured surface. Knead for about 2 minutes
or until the dough has returned to its original size. Shape into a 23cm rectangular loaf.
30ml minestrone soup
Method
Heat the oil in a pot and fry the onion and green pepper until soft.
Add the curry powder, barbeque spice and tomato
Preheat oven to 200˚c. grease an 8cm x 11cm x23cm loaf pan. Place dough in the prepared
pan. Rub top with oil and set aside in a warm place to prove for about 30minutes or until
doubled in size. Fry for about 2minutes, add the beef and fry until browned.
Brush top of the bread with extra milk. Bake for about 35minutes or until golden. The loaf
should sound hollow when tapped on the base. Turn on to a wire rack to cool. Cover and simmer for 40minutes on low heat, stirring occasionally
NB: Do not substitute milk with water but rather mix. Serve with rice, sadza or creamy mashed potato.
The liquid quantity has to be used according to the flour, the liquid should not be more than
50% and not less than 30%.
Add the potatoes, carrots, beef stock and stir well then add the water.
Mix the minestrone soup with 4 tablespoons of water to form a paste and
add to the pot and allow to simmer for 5 minutes until it becomes thick.
