Torta Pasqualina
Where I come from, Easter, like Christmas, has many culinary traditions,
depending on the region or even town you are in.
Obviously most of these recipes have eggs and green vegetables as main
ingredients: the egg as symbol of re-birth and spinach or rocket remind us of
the "bitter herbs" mentioned in the old testament.
This recipe comes from the region of Liguria (where Genoa is) and it's
basically an egg and spinach pasty, but you must admit that "torta
pasqualina" (Easter tart) sounds better...
Ingredients for 4 pasties:
one block of all-butter puff
pastry
one bag of frozen spinach
4 hard-boiled eggs
250 g ricotta cheese
salt, pepper, Marjory
Method:
In a bowl mix together the spinach (previously cooked) and the ricotta with
all the seasoning
roll out the pastry and cut in four squares
wrap each egg with the spinach mixture, place in the middle of a pastry
square and wrap it up, closing all corners
put in pre-heated oven at 180 degrees for 30 minutes or until golden brown.
