Keeping up with the Joneses at Territory Distilling

In the winter of 2018 , Mason and Allyson Jones were both giving birth . She was in labor with their daughter , and he was delivering a business idea that would become Territory Distilling .

Iboth giving birth . She was in labor with their daughter , and he was delivering a business idea that would become Territory Distilling . ( Apparently the name “ Delivery Room Distillery ” was taken !) They actually chose Territory to pay respects to their Oklahoma roots and creating their own space ( territory ) by becoming Stillwater ’ s first and only distillery .

By December 2019 , the couple had signed the lease on their current building , with the hopes of turning their home brewing hobby into a full-blown business . With multiple Engineering and Finance degrees between the two of them , going into the brewery business together was the perfect collaboration – aside from their daughter of course !
The couple spent 2020 presenting business plans , purchasing equipment , and navigating the world of commercial distilling . A special aspect of this business is there are six couples involved who are all related . From researching grain sources to graphic design , and everything in between , this passion project is firmly rooted in family . Fun fact : Allyson and Mason ’ s grandmothers were both candy makers in the 50s , using the same recipe that would become the inspiration behind their Aunt Bill ’ s Pecan Candy Liqueur ( my favorite ) many decades later !
Allyson ’ s Food Process Engineering degree was on full display as she explained the entire distilling process during our tour . I ’ ll admit that science was never one of my strong subjects , but she made it fun and interesting . From finalizing recipes to why stainless steel and copper are used , every aspect of the tour they
offer is informative . And the best part ? You get to sample each of their products ! We were able to try the newest edition to their lineup , Basil Infused Lemon Lime Liqueur and oh my it ’ s delicious . They are currently waiting for the label to be approved before it can be released because the Federal Government apparently has the final say over all things fun and delicious !
Located at 1408 S . Fern Street , Territory Distilling is open to the public every Friday from 3-7 p . m . for retail hours where you can purchase their custom swag and bottles of handcrafted rum . Mason ’ s dad even created clay pottery shot glasses ! Trust me , you ’ ll want one . Tours are offered the first Saturday of each month from 3-7pm . I wouldn ’ t dare leave you guys hanging without a recipe to try :
1 1 / 2 oz Prairie Smoke 1 1 / 2 oz grapefruit juice 1 / 2 tablespoon of honey to taste Shake and pour into a stemmed , but shallow Martini glass .
Prairie Smoke would also be great in a Bloody Mary . Shout-out to Bad Brad ’ s BBQ in Stillwater for smoking ingredients such as blue corn for the Prairie Smoke rotating smoke series !!
