During the pandemic, the usual challenges for restaurants rose up.“ Thankfully, my parents have always been big savers, so we didn’ t go backwards. If anything, the community helped us to stay open. We started doing catering orders for families because everyone was stuck at home,” Juanis said.
The slowest times come when the students leave town, which causes a drop in business.“ We panic a little bit every year,” Juanis said, laughing.
Luis and Consuelo have since retired, and three Vargas children now run the restaurant. Juanis runs the social media and manages the waitstaff; Alma Vargas handles the paperwork, ordering of supplies and permits; and Danny manages the kitchen staff.
The Vargas family is still offering what they always have: popular Mexican food served up in a family atmosphere. SwOk
