City Ribs

INGREDIENTS
• 2 racks of pork spareribs ( about 4 pounds total )
• Kansas City-style barbecue sauce ( store-bought or homemade )
Dry Rub :
• 2 tablespoons paprika
• 2 tablespoons brown sugar
• 1 tablespoon chili powder
• 1 tablespoon salt
• 1 tablespoon black pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 / 2 teaspoon cayenne pepper ( adjust to taste )
Mop Sauce :
• 1 cup apple juice
• 1 / 2 cup apple cider vinegar
• 1 / 4 cup water
• 2 tablespoons Worcestershire sauce
• 1 tablespoon vegetable oil
• 1 tablespoon honey
• 1 tablespoon mustard ( Dijon or yellow )
• 1 teaspoon hot sauce ( optional )
INSTRUCTIONS
• Preheat your grill or smoker to 250 ° F ( 120 ° C ) using indirect heat .
• In a small bowl , combine all the dry rub ingredients . Mix well to ensure even distribution .
• Prepare the ribs by removing the membrane from the bone side of the racks . This will help the flavors penetrate the meat .
• Generously coat both sides of the ribs with the dry rub , pressing it into the meat to adhere .
• Place the ribs on the grill / smoker , bone-side down , and cook for approximately 3 hours , maintaining a steady temperature around 250 ° F ( 120 ° C ).
• While the ribs are cooking , prepare the mop sauce . In a saucepan , combine all the mop sauce ingredients and bring to a simmer over medium heat . Remove from heat and let it cool .
• After the first 1.5 hours of cooking , baste the ribs with the mop sauce every 30 minutes , using a brush or spray bottle . This will help keep the ribs moist and enhance the flavor .
• At the 3-hour mark , check the doneness of the ribs by inserting a toothpick or skewer into the meat . If it slides in and out easily , the ribs are done . If not , continue cooking for an additional 30 minutes , checking again .
• Once the ribs are cooked , remove them from the grill / smoker and let them rest for a few minutes .
• Optionally , brush the ribs with Kansas City-style barbecue sauce on both sides and return them to the grill / smoker for an additional 10 – 15 minutes to set the sauce .
• Remove the ribs from the grill / smoker and let them rest for a few more minutes .
• Slice the ribs between the bones , serve hot , and enjoy !+
