LET FOOD BE YOUR MEDICINE… SPRING PASTA RECIPE Spring is a time for regeneration and that means lovely fresh green vegetables, like courgettes. Like tomatoes, courgettes are actually fruit. They are full of potassium, great to lower blood pressure with their magnesium content. They also contain lots of vitamin A and C and, as they are 95% water, they are also great if you are following a low calories diet! Here is a super quick and easy recipe for a great main course that only requires six ingredients! Ingredients: ➢ ➢ ➢ ➢ ➢ ➢ 500g linguine (or tagliatelle or other ribbon-shaped pasta) one medium size courgette two cloves of garlic one lemon, juice and grated rind flat parsley, chopped up grated Parmesan cheese In a large frying pan put some olive oil, chopped garlic and thinly sliced courgette (I use my potato peeler to reduce the courgette to thin ribbons). Leave the courgette on a low heat, stirring frequently. When the courgette is soft, add the juice and grated rind of the lemon and the chopped-up parsley. While the courgettes are ready you can cook the pasta, following instructions on the packet. Drain the pasta and pour in the frying pan with the courgettes, stirring in some grated parmesan. Enjoy!
