DRESSING INGREDIENTS
large shrimp,
peeled (save and
set aside the
heads and shells)
baby white
potatoes, cut into
¾ inch pieces
radishes, thinly
sliced
capers
finely chopped
chives
torn fresh dill

mayo
0% fat Greek
yogurt
zest of ½ a lemon
pinch of salt
DIRECTIONS
1. Slice the large shrimp along the
back and devein.
2. Cook in salted water.
3. Strain and set aside.
4. Cook potato pieces in salted water
until fork tender. Add the shrimp
shells and heads to the water for
extra flavor.
5. In a small bowl, combine all
dressing ingredients and check
seasoning.
6. Place shrimp and potatoes on a
large platter. Cool potatoes before
assembling.
7. Dollop over dressing and add
radishes, capers, chives and dill.
8. Drizzle a little olive oil, fresh
cracked pepper and a wedge of
lemon over the dish.
TIP
Adding a sprinkling
of smoked paprika is
lovely. This meal goes
heavenly with a crisp
fruity white wine.
