source our fish daily from local markets in
Looe, Brixham, Newlyn and Plymouth, as
well as speciality products from Scotland
and Rungis market in Paris. Our overnight
delivery service means we can offer some
of the freshest produce available in today’s
market. The day boats bring in fish early
each day, which is processed and delivered
up to London and the surrounding counties
later that day.

There are many challenges to this industry,
the main one being the weather and all
its elements that are thrown at us, along
with the changing tides, which all make a
difference as to which fish can be brought
in. Some Chefs have to be educated on the
changing seasons and available supply. We
have 24 hours at the most for maximum
freshness, so transportation is a constant
challenge. If we get caught up with snow,
we just have to try to keep on going.
