use, insulin levels will be high, and the glycogen will either be stored in the
muscles and/or the liver, or converted into fat stores.
The secret to permanent, healthy weight loss is to eat in a way the keeps insulin
levels low most of the time, to encourage fat burning.
At the same time, the body must be supplied with sufficient minerals, enzymes,
vitamins, amino acids, and essential fatty acids to ensure proper functioning and
to keep it out of starvation mode. However, because insulin is also an important
anabolic (or growth-enabling) hormone, it is not wise to try to keep insulin levels
suppressed all the time. There are various factors that influence whether the
glycogen is stored or converted into fat that are discussed in more detail in the
later chapter on strategic eating.
An important concept which has a powerful impact on how the foods you eat
cause either weight gain or weight loss is the glycemic index, or GI. All
carbohydrates have a glycemic index, which is a measure of the strength of the
insulin response on the body created by eating that food.
In general, foods with a high glycemic index are those that cause a larger insulin
response, and low glycemic index foods are those that cause a lesser insulin
response. By definition, table sugar has a GI of 100.
High glycemic index carbs cause a stronger insulin response; examples are table
sugar and white rice.
Low glycemic index carbs cause a weaker insulin response; examples are brown
rice and whole grain breads.
And be warned that the conventional wisdom about glycemic indexes of foods is
wrong!
