Appetizer :
Passion fruit & orange tuna civiche
INGREDIENTS 4oz Tuna - medium diced ¼ cup onion - small diced ¼ cup tomato - Small diced ¼ Cucumber - Small diced
½ cup passion fruit juice ½ cup orange juice
¼ cup lime juice 1 tbsp chopped celantro
Salt to taste
Serves 2
METHOD
Place all ingredients except cilantro in a small bowl and leave to rest for 10- 15 minutes . This will allow the acid to cook the fish .
Plate dish and garnish with celantro serve with flat bread .
Flat bread Yields four 8 ” flat breads
INGREDIENTS 2 cups all-purpose flour
2 tbsp brown sugar 1 tsp salt
1 / 4 cup vegetable oil 1 / 3 cup water
METHOD
ln a medium-sized bowl combine flour , sugar and salt together .
Add oil and water and mix with your hand to form a dough . Knead for 1 minute and set aside for 10 minutes at room temperature .
After 9 minutes , heat pan or grill over medium heat . Divide the dough into four equal pieces and roll into balls . Place dough on a well-floured surface and roll into 8 ’ discs with a rolling pin before placing in a hot pan .
Cook until both sides are golden brown . Remove from heat .
