Switch to a dough hook and knead on medium speed for about 6-8 minutes .
The dough should be smooth , but soft and still a bit sticky . Remove to an oiled bowl . Cover with a piece of plastic wrap . Let rise until doubled , about 1 hour to 90 minutes .
Punch down the dough . Divide in half and place on a lightly floured surface . Knead each piece a few times , form into a log , and place in two greased ( 8x4 or 9x5 ) loaf pans .
Cover the pans lightly with oiled plastic wrap . Let rise until the dough has crowned 1 inch over the tops of the pans , 30 minutes to 1 hour . Meanwhile , preheat the oven to 350 º F .
Bake bread for 35 minutes or until top is golden . Let cool in the pans for 5 minutes , then remove from the pans to cool on a wire rack .
