Serious Chicken Jerk Marinade

Ingredients
1 cup chopped scallions 1 scotch bonnet pepper 1 / 2 cup chopped onion
1 / 4 cup chopped fresh ginger 1 / 4 cup chopped garlic
1 / 2 cup soy sauce 1 / 2 cup vegetable oil
1 / 4 cup apple cider vinegar 1 / 4 cup fresh lime juice
1 / 4 cup orange juice 1 / 4 cup honey
3 tbsp ground allspice 1 tbsp ground cinnamon
1 tbsp ground nutmeg
1 tbsp black pepper 1 tbsp cayenne pepper 1 tbsp smoked paprika
Salt , to taste
Directions
1 . Combine all ingredients in a blender and blend until smooth .
2 . Transfer the marinade to a large resealable plastic bag .
3 . Add your chicken to the bag , seal it , and toss to coat the chicken evenly with the marinade .
4 . Marinate the chicken in the refrigerator for at least 4 hours , or overnight for maximum flavour .
5 . Grill or roast the chicken until it ’ s cooked through and the outside is nicely caramelized and charred in spots .
6 . This jerk marinade is great for chicken , but can also be used on pork , beef , or fish .
