Braised Chicken

INGREDIENTS : 4 each 6 Oz . Chicken Breast
6 each
Roma Tomato ( Small Dice )
3 cups
Heavy Cream
2
Shallots ( Small Dice )
2
Garlic Crushed Cloves
4 oz .
Olive Oil
4 tbsp .
Butter
1lb
Fresh Fettuccini ( cooked )
6 oz .
Goat Cheese
METHOD :
In a 12 ” sauté pan heat oil over medium heat , when oil is hot add the garlic , shallots , chicken , tomatoes and cook till the tomatoes start to break down add Cream and bring to a simmer . Cook for 20 minutes . Remove the chicken and continue to cook the sauce to cook out some of the moisture : about 6 - 10 minutes then add the butter and stir till the butter melts . Cut the chicken and serve over fresh pasta . Finish with Goat cheese .
