Cranberry Iced Tea

Ingredients

3 cups hot brewed tea (either herbal or English)

1/4 cup sugar, optional

1 orange, peel of -- sliced

2 cups cranberry juice

2 cups ice cubes

Preparation

Combine hot tea with sugar and orange peel in a large bowl. Stir until sugar dissolves, add cranberry juice. Place ice cubes in a large pitcher and pour cranberry tea over ice cubes. Add some cranberries for decoration.

Thai Iced Tea

One of the key factors in making it is using authentic Thai tea mixes. These Thai tea mixes are normally dyed with yellow food coloring (look on the package) and that’s what gives it its bright orange color. Also, Thai tea has a vanilla aroma to it. So if you want to have the brilliant orange color and flavors like most of the Thai restaurants, then this is one of the brands of Thai tea to buy: Panthai.

There are probably other brands of Thai tea mixes to buy, just ask at an Asian or Thai grocery store

Ingredients for two glasses of tea

2/3 cup Thai tea leaves

1 2/3 cup Water

1/2 cup Sugar

1 1/2 cup Evaporated Milk (12oz can) or half and half, whole milk, coconut milk, sweetened condensed milk and even low-fat milk.

Big pot for boiling water

Fine strainer or sieve,

Heat-resistant pitcher

Long spoon,

Method

Go to your local Asian food store and look for “Thai Seasoning Mix” or “Thai Tea Dust”. It usually comes in a clear plastic brick-like bag, and looks like dark brown shredded tealeaves. Boil three- four cups of water and pour water into heat resistant pitcher let steep and strain after 5 mins.

Pour over ice ¾ into the glass and top with either; half and half, whole milk, coconut milk, sweetened condensed milk and even low-fat milk. Sweeten to taste!
