Olson was born in Brooklyn but before he was even a year old, his family moved to Highland, his father’s hometown. “I was raised right on Pancake Hollow Road my whole life,” he said. Olson said his family ties go farther back in Highland, recalling that his maternal grandfather owned an Italian resort in town called Maple Crest. Olson said in 1990 he went to St. Thomas in the Virgin Islands and opened a pizzeria/restaurant on the ground floor and a nightclub on the upper floor but things did not go well. “I lost all my money down there, came back and started all over again,” he laughed. Olson decided on this new venture because, “I’ve always loved cooking and feeding people; it’s been a passion of mine.” In recent years Olson has had four back operations and “they want to do my knees, so no more construction; I figured I’ll open this.” Olson started out by marketing six different flavors of Italian infused olive oils, under the moniker “Luigi’s.” He first offered these to local delis and eventually S
