Roasted Tomato Appetizer

2 3 with Fresh Herbs

Colorful and spicy roasted grape tomatoes with baguette slices make a delicious and budget-friendly appetizer . It is easy to make because once tomatoes are roasting , all you need to do is stir twice .
You will need : – One loaf French baguette bread cut into slices one inch wide – 4 cups grape or cherry tomatoes , rinsed and cut in half – 3 tablespoons olive oil – ½ teaspoon dried crushed red peppers – 2 cloves garlic , minced – ¼ cup fresh herbs like basil , parsley , dill , or thyme , minced
Steps : 1 . Wash your hands with warm water and soap for at least 20 seconds . 2 . Preheat oven to 250 degrees . 3 . Place the halved tomatoes on a baking sheet . 4 . Sprinkle with olive oil , salt , pepper , and red pepper flakes and mix . 5 . Roast uncovered in a 250-degree oven for 1 hour ; stir twice during roasting and spread into a single layer . 6 . Remove from oven and immediately stir the minced garlic into the warm tomato mixture . Add fresh herbs and stir again . 7 . Taste and adjust seasonings . If tomatoes seem too acidic , add a teaspoon of sugar and stir to balance flavors . 8 . Serve at room temperature with thinly sliced French bread or stir into cooked pasta as a sauce . 9 . Refrigerate any leftovers .

Corn Pudding with Dill

Nothing accents holiday meals like a delicious corn pudding with a touch of sweetness and a sprinkle of dill . Stir once during baking and your work is finished . Get ready for a treat !
You will need : – Four cups corn ( May use frozen , thawed ) – 4 eggs , lightly beaten – 3 ½ cups milk ( low-fat milk is fine ) – 6 tablespoons butter or margarine
( melted ) – 4 tablespoons sugar – 4 tablespoons flour – 1 teaspoon salt – Fresh or dried dill ( optional )
Steps : 1 . Wash your hands with warm water and soap for at least 20 seconds . 2 . Preheat oven to 325 degrees . 3 . In a large bowl , combine melted butter , sugar , flour and salt . 4 . Add lightly beaten eggs and beat mixture until well blended . 5 . Stir in corn and milk . 6 . Pour into a greased 9x13 inch casserole dish . 7 . Bake 45 minutes in preheated 325-degree oven . 8 . Stir once halfway through cooking and sprinkle top with dill . 9 . When done , pudding will be golden brown and a knife inserted near the center will come out clean . 10 . This recipe makes 12 servings . Refrigerate leftovers .
