" # # $ %   &  %   $  Shrimp Veracruz with Spaghetti Squash For good quality shrimp here in Florida look on the package for Florida or Gulf Shrimp, those will be freshly caught and frozen. Ingredients: 3 tbls olive oil 1 onion, thinly sliced 4 garlic cloves, minced 1 green bell pepper, seeded and sliced thinly 1 red bell pepper, seeded and sliced thinly 4 large tomato's, chopped 1/4 cup cilantro, minced 4 tbls capers, drained 4 tbls green olives, sliced 4 tbls black olives, sliced 2 tbls pickeled jalapeno (jar or in a tin) 1 tsp oregano 1/2 cup white wine salt and pepper 1 tbls butter 16 jumbo shrimp. Parmesan cheese One good size spaghetti squash. Slice down in half, I use a cleaver, but you can use a sharp knife and slice it in half. Take a spoon and scrap the seeds out of each half. Clean off under tap water and place on a plate, open side down and microwave for 10 minutes. Take a fork and check one side and see if the pulp separates. If not, put back in the microwave for a couple of minutes. When done, hold one side with a towel or hot pad and take a fork and scrape downward into a bowl. You can scrape down to the hard shell of the squash that will look like cooked pasta. You should have approximately 4-6 cups of squash. Set aside. Peel and clean the shrimp. Slice the shrimp down the middle, so you have 2 pieces for each shrimp. Heat the butter in a frying pan over medium high heat. Add shrimp and saute till pink, 2-3 minutes. Remove and place on a plate. In another large saute/frying pan heat over medium high heat and warm the olive oil. Add the onion, garlic, bell peppers for 3-4 minutes till softened. Add the tomato's, cilantro, capers, olives, jalpenos, oregano and white wine. Add some salt and pepper and simmer over medium low heat, stirring occasion- ally until thickened. Check the salt and pepper and add more if needed. Fill a bowl with 2 cups of the squash, add a ladle or 2 of the sauce and top with the shrimp. Take two forks and toss the mixture together. Grate some Parmesan cheese on top...and you are ready to go! Any leftovers are great the next day or two. This recipe works for us as a dinner for two and leftovers.
