Sommelier Picks with Elissa Pablo

Two weeks into summer and it's time to talk Rosé, the quintessential summer wine. Rosé by nature is a friendly wine; it pairs well with most foods, it's easy on the wallet, depending on what style of wine you like, Rosé is palate friendly as well, ranging from easy drinking to sophisticated with depth and character. This month we sat down with Elissa Pablo, Sommelier at Del Frisco's Grille in Palm Beach to talk a bit about her Rosé wines of choice this summer.

Atmosphere Rosé, Provence, France

When drinking pink we have to start with the rose gardens of rose gardens: Provence. The Atmosphere

Rose, a handcrafted provincial Rose of cinsault, syrah, grenache and cabernet is one of my favs and our rose at the restaurant by the glass. A delicate nose of strawberry and raspberry with a touch of lemon, the crisp acidity will pair well with a rich dish; think cheesy!

Laurent-Perrier "Cuvée Rosé" Brut, Champagne, France

I'd bleed for this wine: Laurent Perrier Rose Champagne! One of the few rose champagne made with the saingnee method. This pink Champagne has depth of flavor, but a lot of acidity which makes it a good pair for a lot of different dishes. That being said since were drinking pink it only seems right to eat pink. Tuna, Salmon or shrimp would go well.

Elissa Pablo is Del Frisco’s Grille Palm Beach sommelier and dining room manager. Originally from South Florida, Pablo has more than a dozen years of experience in restaurants. With proven grace for hospitality and her operational skills, Pablo’s work will include educating servers on the wine options available at the restaurants. A Level 1, Court of Masters, sommelier, Pablo is thrilled to be able to share her extensive wine knowledge with colleagues and guests at Del Frisco’s. Pablo is currently studying to obtain a Level 2 certification. Her favorite wines are newer releases such as California Zinfandels.

Antinori Guado al Tasso Scalabrone, Bolgheri, Italy

A rose by another name. Rosato. The Scalabrone from the famous Antinori family is one of Italy's flowering wines. This bright pink peony colored wine from Tuscany is made from Cabernet, merlot and Syrah. Bone dry and bolder thank a lot of roses, I might try a meatier fish or charcuterie.

Martian Ranch & Vineyard Rosé, Santa Barbara County, California

The Martian Ranch Grenache rose is probably top of my list for roses right now. Since I love bolder wines this robust style of rose is always my date to any backyard shindig. Nothing says summer is really here like

a BBQ. This mouth filling wine will stand up to grilled meat.
