Ingredients

1 pack of ready made short crust pastry.

By all means make your own but we did not.

For the Filling:

2 cups fresh cheese (Use any type of fresh cheese, you can also make some traditional Portuguese style with this Queijo Fresco recipe)

1.5 cups sugar

8 egg yolks

cinnamon to taste

1 12 cup cupcake/muffin baking pan

1.5 / 150oC

This is a traditional dish fromSintra, but this was the Italian interpretation of a beautiful dessert

Preparation

Queijada de Sintra

1) Preheat the oven to 380 degrees Fahrenheit.

2) Knead the flour with the warm water together with the salt, 1 egg, and melted butter until it is an even consistency.

3) Use a roller to roll the dough very thinly and cut into circular formed shapes.

4) Fill a greased cupcake/muffin baking pan with the circular dough shapes. Set aside.

5) In a bowl, mix the fresh cheese, sugar, cinnamon and egg yolks well.

6) Place the mixture into the dough formed shapes.

7) Bake until the outsides are golden brown and the centers are cooked, but still soft, for around 15-20 minutes.

8) Remove them from the oven and sprinkle with cinnamon to taste. Serve.
