Quick Reuben Pasta Salad

Ingredients:
1 (16 oz) package bow-tie pasta
4 oz shredded corned beef
4 oz sauerkraut
3 oz shredded swiss cheese
3 oz Thousand Island salad dressing
Directions:
1. Bring a pot of lightly salted water to boil, cook bow-tie pasta, stirring
occasionally until done (12 mins), drain
Mix pasta, corned beef, sauerkraut, swiss cheese, & Thousand Island together in bowl until evenly coated.
Death by Chocolate III
Ingredients:
1 (19 oz) package brownie mix
2 (3.9 oz) packages instant chocolate pudding mix
1 (16 oz) package frozen whipped topping, thawed
3 (1.4 oz) bars chocolate covered English toffee
Directions:
1. Prepare brownies according to box directions, allow to cool
2. Mix pudding according to directions
3. Layer in glass punch bowl: ½ brownies (crumbled), ½ pudding, 1 toffee
bar (crushed), ½ whipped topping; repeat layers in same order, topping
with last toffee bar. Refrigerate before serving.

Parents Encouraging Parents (PEP) is a unique, parent-run statewide conference sponsored and funded by the Nebraska
Department of Education (NDE) and is for Nebraska parents who are raising a child with a verified disability. The child
with the disability must have an active IFSP or IEP and be enrolled in a Nebraska school district. This year's PEP
conference will be held March 17-19, 2016 at the Younes Conference Center in Kearney, Nebraska. There is no
registration fee. Lodging and most meals are provided. Please register early as space is limited to 110 participants. For
further information, contact Mrs. Eckhout at the school or call Gina Roth at NDE at 402-471-2471.
