Kerwin Peter: Thirsty Parrot is basically a restaurant that sells food, drinks and art. It’s a mixture of my artistic and culinary creativity. Q: Why did you start the business? KP: I had this vision for many years of opening my own restaurant. It took me a while to get the ideal spot to get it going. I love art and cooking, so I decided to marry the two and get one spot where I can do both. Q: How did you decide on the name Thirsty Parrot Beach Bar and Grill for the business? KP: Actually, I did the logo before I came up with the name. I was looking for a name that I can also use for merchandising purposes. So my logo includes our national bird and national beer. Thirsty Parrot sounded like a good name. Q: Why did you choose this location? KP: I played volleyball in the past with the Saint Lucia Volleyball Association. When Saint Lucia hosted the first NORCECA Beach Volleyball Tournament some years ago at Pigeon Island, I noticed this old, abandoned building near the beach. Right then I decided that it would be the perfect spot for what I wanted to do.
