Breadfruit Puffs
Makes approx 30 puffs
Ingredients
1 breadfruit, 1 medium onion, chopped, 2 blades chives,
chopped, 230 g fresh white breadcrumbs,1 eggs, size 2,
beaten, Vegetable oil for frying
Method
Peel and chop the breadfruit into bite-size. place in a
saucepan of boiling water, reduce heat, and cook until
tender, about 15 minutes, then drain. While still hot, mash
with butter and combine with chives and freshly ground
black pepper. Dip spoonfuls of the mixture into the beaten
egg then roll in breadcrumbs and deep-fry until golden.
Serve hot with others snacks as an appetiser.
Vegans should substitute beaten egg with soya milk.

brown skin and soft, creamy flesh
