In Calgary for almost 20 years now, the success of this Hungarian
restaurant has hinged on good paprika. “It has to be spicy and smoky,”
says Rosza Jonas, the matriarch behind the eponymous eatery. “We
import ours from Hungary.”
The homey atmosphere is a draw for ex-pats and locals alike: “We
see people [who] came as babies now coming with partners,” she says.
“This is shocking for me.” Whenever this family-run establishment is
looking to increase foot traffic (not often, it must be said), daughter
Janka handles the marketing effort.
“The Csírkepaprikás Nokedlíval [chicken paprikash served with
homemade dumplings] was voted one of the best 25 things to eat in the
city a few years ago,” says Linda Garson, editor of Culinaire Magazine.
And for good reason: “It’s homey, rib-sticking food.”
