form a delicious and easy ‘to go’ meal!
Tuna + bean pockets
These delicious and savoury tuna pockets are baked on
parchment paper in a 375°F oven for 20-minutes or until
golden brown. In a large bowl combine 1 can of drained and
rinsed pinto beans, 3 cans of drained tuna, 1/2 onion, black
olives, parsley, salt + pepper, rind of 1/2 a lemon or lime.
They freeze very well and are great as leftovers!
Other combinations to try:
PIZZA POCKETS: With cheese, salami, tomato sauce,
mushrooms, onions, peppers.
BREAKFAST BITES: Wrap in smaller batches and bake for
only 10-minutes. Add: scrambled egg, peppers, mozzarella
cheese, Italian seasonings, or fresh parsley.
APPLE + PEAR MINI POCKETS: Peel and slice up some
apple and pear squares, combine with a touch of salt, brown
sugar, lemon rind, raisins (optional), and cinnamon. Best
when combined with a tablespoon of Chia seeds, to thicken
naturally.
