and hungry, and we’re looking
for easy ways to get full nutrition
that’s grab-and-go. Welcome
empanadas: “meals in a pocket.”
Our dough recipe takes just a
couple of minutes, it’s freezeable,
rolls easily, and can be stuffed with
just about anything – whether
sweet or savoury. It doesn’t need
heavy calorie-filled shortenings
or butters, and the whole thing
mixes quickly in a food processor.
Give it a try next time you have
leftover stew or chicken. Great
for entertaining too! And once
filled, they can be either baker
or fried for that crispy crunchy
outside that is so satisfying... oh,
the things we’ll make!

The easiest dough recipe ever!
– makes 16!
Ingredients
- 2 cups flour
- 3/4 cup fine (00) corn flour (also known as ‘semolina’)
- 2 tsp. sugar
- 1/2 tsp. salt
- 3 Tbsp. margarine, OR butter, OR oil
- 2 large eggs
- 3/4 cup of water
How to make it
In a food processor, combine flours, sugar, salt, and margarine.
Process for 5 seconds to combine. Add eggs and water, process again
until very soft (about 3 minutes). Put on floured table, knead until
smooth. Cover with a cloth and let rest for 30 minutes.
