BEST SUMMER SALADS
T hese easy summer salad recipes are a great
alternative to the typical potato or macaroni
salad side dish. They are all highly nutritious
and can be enjoyed as a full meal.
“Pickled” beet, spinach & feta salad
SUGGESTED SALAD INGREDIENTS DRESSING
• 2 medium ‘pickled’ beets, sliced (see recipe below) • 2 Tbsp. grapeseed or olive oil
• 2 large handfuls of fresh spinach • 1 Tbsp. apple cider vinegar
• 2 Tbsp. feta (or goat cheese) • juice from 1/2 lemon or lime
• 2 Tbsp. chopped walnuts • salt & pepper to taste
HOW TO MAKE QUICK “PICKLED” BEETS
• Beets, peeled, cut into 1” chunks
• water and apple cider vinegar
(half of each) to cover beets
• 1/2 tsp. of allspice
• 1/4 tsp. of nutmeg Cook for 10-12 minutes until
fork-tender
• 1/2 tsp. of salt Discard juice and enjoy!
Beets are high in immune-boosting vitamin C,
fibre, folate, and essential minerals like
potassium and magnesium.

Put all ingredients in a small
pot and bring to a boil.
Bring temperature down to a
simmer and mix occasionally.
May be refrigerated for a
week in a glass jar or bowl
with a lid.
