FOODS SEASONAL EATING June: Garlic Scapes The secret to garlic scape cookery is to pick them early in the season, as this is when they will be at their most tender. Garlic scapes have a mild garlic flavour with the consistency of asparagus, and many health benefits: • Improve oxygen levels within the blood • Their high content of allium protects against Osteoarthritis • High in antioxidants July & August: Zucchini Zucchini is one of the very low calorie vegetables, and very high in fiber. They are especially good when barbecued and baked – such as the recipe shown on the right. Zucchini offers great health benefits: • Golden skin varieties are especially rich in flavonoid antioxidants such as carotenes, lutein and zea-xanthin. • Very good source of potassium, which helps reduce blood pressure by countering the effects of sodium • Protect the liver and kidney against oxidization • Their high content of Diallyl sulphide has been reported to cause cell death in bad cancer cells • Because of their very low caloric count, they are one of the most recommended by dieticians for weight loss.
