Carrot Turmeric Breakfast Cookies
These soft cookies are loaded with goodness, plus they’re
gluten-free... So healthy, they’re delicious for breakfast!
Start by pre-heating oven to 350°F, and lining two baking
sheets with parchment paper.
• 3 sweet carrots, peeled and grated
• 1/3 Cup almond milk
• 1/2 Cup maple syrup
• 1 egg
• 1/2 Cup oatmeal
• 1 tsp turmeric powder
• 1 tsp cinnamon
• 1/2 tsp ginger powder
• 1/4 tsp salt
• 1 tsp baking powder
• 1 Cup gluten-free flour
• 1 Cup almond flour
• 1 tsp. orange extract (or vanilla)
• 2 Tbsp. chia seeds
• 1/3 Cup chopped walnuts (chocolate chips, optional)
Combine the first 4 ingredient and mix well. Add all other
ingredients, mixing gently until well combined.
Drop tablespoon-fulls of the batter onto baking sheets,
leaving an inch in between each dollop to allow for spreading
Bake for approximately 25 minutes or until golden around
edges. Makes 2 dozen cookies.
