Baked Eggs in Avocado
2 ripe avocados (serves 4 people)
4 fresh eggs
1 Tbsp. grated romano or parmesan cheese
salt & pepper to taste
chopped chives for garnish
Preheat the oven to 425 degrees.
Slice avocados in half, and take out the pit.
Scoop out about two tablespoons of flesh from the centre
of the avocado, just enough so the egg will fit snugly inside.
Place the avocados in a small baking dish, supported by
a tin-foil bed so they don’t tip over.
Season with salt & pepper, then crack an egg into each
avocado half. Garnish again with a bit more pepper.
Sprinkle with cheese and chives.
(alternatively you can sprinkle with small pieces of bacon).
Place in the oven and bake for approximately 20 minutes.
(Cooking time will depend upon your oven and size of eggs).
This recipe is great for anyone on a no-carb diet.
Best when avocados are ripe, so their flavour combines well with that of the eggs.
