• 1 head of cauliflower, stalk removed, broken into florets
and pulsed in a food processor until fine. Then steam in
a basket for 5-6 minutes and drain well (place in between
paper towels to dry well). It’s especially important to
dry the steamed cauliflower very well, otherwise you
will end up with a mushy-soggy crust!

• 1/4 Cup shredded mozzarella
• 1/4 Cup grated Romano cheese (or Parmesan)
• 2 eggs
• 3 garlic cloves, minced (roasted garlic works best here! see
below recipe for roasting garlic!)
• 1/2 tsp. oregano, or Italian seasonings
• 1/2 tsp. rosemary (optional, but delicious!)
• 1/2 tsp. salt
• 1/4 tsp. pepper
Preheat oven to 400°F. In a bowl, combine all ingredients
and mix well using your hands. Place on a parchment-
paper-lined baking sheet and bake for 20-25 minutes or
until golden brown.
Remove from oven and allow to cool slightly before
adding pizza toppings and baking again for 10-12 minutes.
To Roast Garlic: Chop top
of whole garlic head + cover with
about 2 Tbsp. of oil. Wrap into
a foil ball and bake for 15-20
minutes in a 400°F oven. After
baking, the garlic will be roasted
to an aromatic golden brown and
will be deliciously soft!
