WINE TEMPERATURE Optimal Temperatures for Serving Wine T he serving temperature of wine is extremely important for unlocking the full aroma and flavours of wine. Vintage Port 19°C (66°F) Shiraz, Bordeaux 18°C (64°F) Pinot Noir 16°C (61°F) Madeira, Tawny Port 14°C (57°F) Sauternes 11°C (52°F) Riesling 8°C (47°F) Ice Wines 6°C (43°F) Cabernet Sauvignon Red Burgundy 17°C (63°F) Zinfandel, Chianti 15°C (59°F) Rosé, Beaujolais 12°C (55°F) Chardonnay 9°C (48°F) Champagne 7°C (45°F) Asti Spumanti 5°C (41°F) “Each wine has an ideal serving temperature, and one temperature is not suitable for all,” explains Dale, owner of Winexpert Burlington. “Generally, red wine should be decanted for close to an hour before serving, while white wine is best served chilled.” Dale further explains that this is a guide only, as many reds can be enjoyed slightly chilled, while sweet whites can be closer to ambient temperature. Refrigerator temperatures are usually set at 2°C (35°F), which can be ‘too cold’ for many wines, cooling the bottle and making the wine expand as its delicate flavours are somewhat lost and undefined. The average temperature for storing wines is 20-22°C (68-72°F) in a dark and humid place, without vibrations. • ✦ High-Quality wine at a fraction of wine-store prices ✦ One kit = 30 bottles: ready in 4 to 6 weeks ✦ 40+ varieties to choose from ✦ Voted #1 in Burlington!
