CHOCOLATE BROWNIE RECIPES

3/4 cup nonfat Greek yogurt
1 tsp vanilla essence
1/4 cup skim milk (Almond, Cashew, or Coconut
milk)
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup coconut sugar
1 egg
1/3 cup applesauce (unsweetened)
1 teaspoon baking powder
1 pinch salt
METHOD:
Preheat the oven to 200°C. Grease a square
baking dish (8″x 8″). Combine all ingredients into
a food processor or a blender, and blend until
smooth (about 1 minute). Pour into the prepared
dish and bake for about 15 minutes. Allow to cool
completely before cutting into 9 large squares.

The Fudgy
1 can (15 ounce) chickpeas, rinsed and drained
1 cup cashews, soaked for 1 hour in warm water
(discard the water after done soaking)
1/2 cup cocoa powder
1/3 cup pure maple syrup (agave or honey can be
substituted)
1 egg
1 tsp vanilla
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup dark chocolate chips (optional)
METHOD:
Preheat oven to 180°C
Combine all ingredients, except chocolate chips,
into a blender
Blend until a batter forms (the batter will be thick)
Stir in chocolate chips
Pour into a greased 8x8 baking dish
Bake for 25-30 minutes or until toothpick comes
out clean. Do not over cook, it will dry out the
brownies
Allow to cool 20 minutes before cutting and serving
If you have a high speed blender (i.e. Blendtec or
Vitamix) you can skip soaking the cashews.
