Melon, jalapeƱo, lime, red onion and cilantro salad (chicken optional)

This is hands down one of the best summer salad entrees you can have.

Vegan or with some roasted chicken, it is a cinch to please almost anyone. Cut a whole cantaloupe in bite sized pieces, toss with a large chopped red onion, a few jalapeƱos (to taste), a fistful of cilantro, juice of 3-4 limes, salt,

and black pepper. If you're looking for a vegan meal stop here, otherwise pull the meat from a rotisserie chicken or chop a few grilled chicken breasts and mix it all together. DELICIOUS, healthy, sweet, savory, spicy, and tangy all in one! This should also most definitely be served with a gin and tonic ;)
