T he Mauritian tourism industry has always been at the forefront of sustainable development with an environment charter initiated by AHRIM since 2003. SERVICE A LA FRANCAISE wishes to contribute, in its own way, to the environmental protection of Mauritius. Each “Meilleur Ouvrier de France” will integrate a sustainable environment component in their respective training program. In addition, SERVICE A LA FRANCAISE "Journey towards Professional Excellence" passports will also include a sustainable development component. OPTIMIZATION OF WASTE AND GOOD PRACTICES IN HOTELS Incorporating good practices related to the reduction of energy consumption, waste and water. INVOLVE ON A NATIONAL SCALE with participation in forums or local initiatives, supporting the creation of professional craft associations, to help promoting and to structure local crafts. TRAINING ON SUSTAINABLE TECHNIQUES (Food related activities) Cooking and conservation methods and procedures that respect the product and the environment. THE 5 COMMITMENTS OF SERVICE A LA FRANCAISE: LOCAL PRODUCTS Use of local products, protection of biodiversity and encouraging local production and processing.
