# 5- I think metallic gold or silver cake boards look tacky, unless it actually suits the theme of the cake( like a silver board for a space cake). I was so grateful when suppliers started offering white and black cake boards for sale, so I’ d never have to cover my boards in fondant again( I hated doing it and I was terrible at it).
# 6- Perhaps aside from my first year in business, I always priced my cakes for profit and I ensured they were always reflective of my skill. At one point, I was the highest priced decorator in town and I honestly have no regrets. I had amazing clients that understood my worth. I’ m grateful that I learnt to price correctly so early on and I always encourage decorators to charge what they’ re worth.
# 7- When I first started out, I actually hated the baking part. I just wanted to decorate. Over time, the hate softened into‘ meh, baking is ok’, and now I don’ t mind it at all. I call that progress!
# 8- On my very first wedding cake order, I called the bride on her wedding day( I’ m crazy, I know) to change the design because I’ d misjudged the size of my decorations and overestimated my skills. Very thankfully the bride was easy going, but I definitely learnt a lot of lessons that day.
# 9- When it’ s 2am, and I’ m still working on a cake, I do start to question my life choices.
# 10- Maybe the most controversial confession … I genuinely believe that red velvet cake is the poor cousin to chocolate cake. The only thing it’ s got going for it is the cream cheese frosting. But honestly, I don’ t even count that as part of the cake.
