Recipes Meatballs In Pineapple Sauce

1 tablespoon cooking oil 1 / 3 cup finely chopped onion 2 tsp. finely grated peeled ginger root * 1- 14 oz. can crushed pineapple, drained and juice reserved
1 / 2 cup chili sauce 3 tablespoons lime juice
INGREDIENTS 2 tsp. soya sauce 1 / 4 tsp. salt 2 / 3 cup reserved pineapple juice 2 tsp. cornstarch 1 / 4 grated lime zest Your choice homemade meatballs( or can use premade from store)
DIRECTIONS
Heat cooking oil in medium saucepan on medium heat. Add onion. Cook for about 2 minutes, stirring often, until starting to soften. Add ginger.
Heat and stir for another 2 to 3 minutes, until onion is fully softened. Add next 6 ingredients. Stir and bring to a boil.
Stir reserved pineapple juice and cornstarch in small bowl until smooth. Slowly add to crushed pineapple mixture, stirring constantly.
Heat and stire for 2 to 3 minutes until boiling and slightly thickened. Add lime zest. Stir and then remove from heat.
Put meatballs of choice into an ungreased 2 quart( 2L) casserole. Pour pineapple mixture over top. Stire until coated.
Bake, uncovered, in a 325 F oven for about 30 minutes until meatballs are heated through. Serves 6.
Note: if you have leftover sauce, it is good heated and poured over baked chicken, pork chops or even sausage.
