Zuppa- Italian Toscana Soup This is the instant pot recipe. If using stove top just follow directions and cook on stove, then simmer for a couple hours. Ingredients 1 small chopped onion 1 Tbsp olive oil 3 cloves garlic 2 cups chopped kale 2 cups diced potatoes (May use a bag of frozen diced hashbrown potatoes.) 32 ounces low sodium chicken broth 1 pound hot Italian sausage (not links,fresh ground) 6 slices cooked bacon 1 cup milk or cream Instructions Place your pot on saute, add olive oil and onions, garlic, and sausage. Brown sausage until it crumbles. Add potatoes, chicken broth, and place kale on top. Cover and place pot on manual high pressure for 10 minutes. Do a quick release. Place pot back on saute. Stir in milk or cream. Chop bacon and stir into soup. Enjoy with a hearty Italian bread. Really Good Beef Stew This stew is really tasty and fully cooks in 35 min- utes in the instant pot. Use a regular stock pot if you wish, and simmer on stove for a few hours. Ingredients 2 pounds beef stew meat, cut into bite-sized pieces 1 teaspoon salt 1 teaspoon pepper 1 medium onion, finely chopped 2 to 3 cloves of garlic, minced 6 ounce can tomato paste 32 ounce beef broth 2 Tbsp Worcestershire sauce 2 cups baby carrots 4 to 5 small red potatoes, cut into bite-sized pieces - about 3 cups. 1 Tbsp dried parsley 1 tsp oregano 1 cup frozen peas 1 cup frozen corn 1/4 cup flour 1/4 cup water Feel free to substitute your favorite veggies like ru- tabaga, kohlrabi, squash, etc. Instructions Place all ingredients into instant pot except for the frozen peas, corn and flour/water mixture. Stir until well-combined. Seal instant pot. Select the meat/stew option.- 35 minites at high pressure. Once cooking time is complete, let instant pot sit for 12 minutes. After 12 minutes, do a quick pressure release, placing the valve to the venting position. After instant pot is depressurized, stir in frozen corn, peas, and flour/water mixture. Stir until stew thickens a little bit more, and corn/peas are warmed, about 3-5 minutes.
