Mix all ingredients and let stand at room temperature for at least one hour. Slice the baguette, brush with olive oil and toast or grill until lightly browned. Rub each toasted slice baguette with a clove of raw gar- lic. Top with tomato mixture. Cheesy baked tomatoes A delicious and healthy side-dish recipe, these cheesy baked tomatoes go well with just about anything. Easy to make on the grill, too. Ingredients 4 large tomatoes (halved) 1/4 cup freshly grated Parmesan cheese 1/2 cup reduced fat mozzarella cheese (shredded) 1/4 cup chopped fresh basil Salt and pepper to taste Preheat oven to 450° F. Mist lightly with non-fat cooking spray and bake until the tomatoes are tender, about 15 minutes. Fresh corn and tomato fettuccine This recipe combines delicious whole wheat pasta with the best of fresh garden pro- duce. It’s tossed with heart-healthy olive oil, and a little feta cheese gives it bite. Ingredients 8 ounces uncooked whole wheat fettuc- cine 2 medium ears sweet corn, husks removed 2 teaspoons plus 2 tablespoons olive oil, divided 1/2 cup chopped sweet red pepper 4 green onions, chopped 2 medium tomatoes, chopped 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup crumbled feta cheese 2 tablespoons minced fresh parsley In a Dutch oven, cook fettuccine according to package directions, adding corn during the last 8 minutes of cooking. Meanwhile, in a small skillet, heat 2 tea- spoons oil over medium-high heat. Add red pepper and green onions; cook and stir until tender. Drain pasta and corn; transfer pasta to a large bowl. Cool corn slightly; cut corn from cob and add to pasta. Add tomatoes, salt, pepper, remaining oil and the pepper and on- ion mixture; toss to combine. Sprinkle with cheese and parsley.
