Butternut Squash Soup

THIS IS A SAVORY RECIPE THAT ' S HEALTHY AND FILLING . GREAT FOR PARTIES , FAMILY DINNER , OR MEAL PREP . BUTTERNUT SQUASH IS HIGH IN POTASSIUM , WHICH CAN KEEP YOUR BLOOD PRESSURE IN CHECK .
Recipe Ingredients :
2 Butternut Squash 2 Cups of creamy coconut milk Minced Garlic 4 Bay Leave 1 cup chopped carrots 1 / 2 tsp of chopped parsley 1 / 4 chopped onions 1 / 2 cup of nutritional yeast 1 / 4 Olive oil
Directions : Preheat your oven to 395 F Slice your squash in half and remove filling and seeds . Coat squash with olive oil and place in pan and let it bake between 25 to 30 mins . Once don baking place to the side . In a stew pot add oilve oil , choped onions , garlic . Let simmer . While simmering peel off squash skin and chop squash in smaller pieces . Add bay leaves , carrot and squash pieces to stew pot . Mix everything in the pot really good and let it simmer .
After simmering mash or blend all contents in the stew pot . Once mixed slowly add coconut mix until the soup gets to your desired consistency . Let the soup simmer for 10 mins on medium low . This recipe makes about 8 servings . This is a great meal on a chill fall day . You can compliment the dish with a nice green salad , and garlic bread or my favorite soft baked croutons . This meal will definitely get the taste buds going .
