off of Ky . 196 in Nancy . “ We were displaced and we didn ’ t didn ’ t know if we were going to ( open ) back up at all ,” said Charles . “ A lot of ( places ) that were available were too expensive for what we were trying to do . Fortunately , this little spot in the country would become for sale and we scooped it up .”
While the Whippoorwill Diner has found a new place to settle in , the building itself was long due for a remodel . As a result , the restaurant only served to-go meals while renovations were being made . “ Even though this building is an old building and needs a lot of work and upgrades , we are trying to make it our own and in a decent , presentable shape for everybody ,” said Amber .
With to-go orders alone , the diner had already matched how much it made from its time in Burnside . With the dining room now recently open , “ the sky ’ s the limit ” according to Charles .
“ We want to embrace the community we ’ re in , but we ’ re also going to have to raise the bar for ourselves every single day ,” he adds . “ People continue to drive from Burnside , Somerset , Stanford , Russell Springs , and Eubank . Our regulars are already coming back . We ’ ve got to raise the bar .”
While still getting back up on its feet , Whippoorwill Diner strives to continue growing . “ While it was very hard to get through , we ’ re looking on the other side now ,” said Amber . “ We ’ re here for the long haul . I envision hiring a few more staff members . I want a very strong and dedicated staff .”
Though Nancy ’ s not been the diner ’ s home for long , the Wrights already cherish the new building and the community to come with it . “ I ’ ve learned not to take anything for granted ,” added Amber , looking back on the fire that devastated their business . “ It can be here one day and gone the next . Always be thankful for what you have because it can be taken away in just a few seconds .”
