The Rex is a “ very unique ” restaurant , noted Barker — and labeled Kentucky Proud .
“ We ’ re what is a common term now , we ’ re farm-to-table , but one of the things we do is , we have a really wide menu ,” he said . “ Everything we make , we make from scratch . It ’ s home cooking . That ’ s what we thought the appeal would be , and it has far exceeded our expectations .”
Favorite entrees include chicken and dumplings , the Manhattan sandwich , homemade meatloaf , pork tenderloin , country ham , and what Barker calls “ the best catfish around .” There ’ s also a choice from 22 different side dishes , to offer diners a true selection of accents for their meal .
There are also daily specials that offer regulars a taste of something different , with one regular expectation — “ Of course , Friday night is mandated by society , it has to be fish on Friday night ,” quipped Barker .
